I'm looking at changing from 201SS to 441SS, food service application (shear, punch, bend, weld). Any good stories, any NIGHTMARES?

I would suggest you do a little research on this. Type 441 ss is a ferritic stainless that is commonly used in higher temperature applications, like heat exchangers and exhaust manifolds. I would suggest you look at 444 ss for your food processing.

The 201 stainless steel is an austenitic stainless that work hardens but it is susceptible to chloride stress corrosion cracking.
