I'm looking for information on brazing 11Ga steel just as a seal between some stitch welding.  Any suggestions?

The greatest problem I see with it is distortion if it is a long joint.

Another issue is what are You sealing? Steel and brazing alloy form a galvanic cell when wet [with an electrolite]. This accelerates corosion.

I agree.  Your intended usage makes a big difference in what answer will be best here.
Body panel sealant might fit the bill . . .

Material A606 11ga, Joint design is a 1" weld every 4", then to seal the seam they go back over with a silicon based sealer and seal the non welded areas.  I was looking at mig brazing for the lowered heat input would allow to weld entire length no stops, and seal as well.  Testing a mig silicon bronze wire this next week pulse settings with 100% Argon.
