I'm looking for documentation on welding gases. A comprehensive
look at the different mixtures, their uses, the chemical and
metalurgical processes they produce, how they interact with
the various electrode types (the alloys, fluxes), etc.

Any good books out there?

The best source is AWS C5.10/C5.1M:2003, Recommended Practices for Shielding Gases for Welding and Cutting. American Welding Society
