Well I was sitting in my deck chair watching the sunset with a glass of English ale and a smoke....right after devouring an 1" thick ribeye, bacon wrapped grilled shrimp on skewers and all the trimmings.  I figured heck I could just die right now and it would be ok because it just don't get much better.  ahhhhhhhhhhhh.    Well I decided not to kill myself because I was not sure who would tend the smoker with the whole pork loin and brisket I started today....hmmmm in about 20 hours BBQ city and I might be able to wrangle another cold beer.  Sometimes it is ok to not be working.

Dave I would ship you some but I am not sure if the FDA would let me.  I think some well smoked meat in a vacumn bag would ship through the mail no problem.  Got the sauces and beans simmering over a cherry+hickory fire at the moment.  I am just experimenting with some new rubs and marinates right now.  I got about 2.5 tons of pecan saved back, I intend to put a dent in it this year.

I'm rollin into Cortez, Co to do a couple well heads, when I notice I got a couple messages, (cell service is in and out all the way down there), but I gotta get in my room and get some sleep, for the next day will be mucho hectic. I check in and unload all my crap, hook up my laptop, and stretch out on the bed.........then check my phone messages.

So because of the bad signal, I only catch certain parts of the message, from some southern talkin hillbilly, and some of the only words I can discern from the rest happens to be "this is Tommy", and something about "committing suicide"...........

Hence this post.......but you can imagine.............:eek:

TEE HEE HEE HEE.   :grin:  Remember sanity is just an option, it certainly is not required....I always found leaning away from it a bit to be a lot more entertaining.  Sorry for the concern tho....do not worry I will more then likely make the news taking a few with me then ever turning a barrel at myself.   Could have bought the farm the other day tho....My mother inlaw walked in to my house with two rifles barrels pointing horizontal, "oh don't worry there not loaded".  I explained to her not to carry guns around that way period and that "they are not loaded" is the last thing most people who get shot hear.  I checked both guns before storing them and of course ejected a shell from one of em:mad:

I would rather just invite you all to a nice BBQ at my place.....you folks like horseshoes, cold beer, cold whiskey, shade trees and music?  Oh yea and plenty of food?  I try to wrangle live music some times but usually I got to do that at somebody else's place...the police station is almost right across the street (they are easily bribed with food btw). 

Ok I will lighten up on the food thing, I totally understand how it sucks to be on the road and under the mercy of the fast food devil.  We just had home cooked chinese tonight 7 hours of prep/cooking totally from scratch.   Mongolian beef (ribeyes for beef), 13lbs of chicken mostly tempura, Tao chicken, Thai curry, Orange spicy chicken, sweet and sour sauce (from scratch) and a generous wok full of my fried rice (cooked in the garage on my turkey burner)....pisses me off my wife must have that damm duck sauce...I have not learned how to make it (well) yet.  Lot of dang work making that stuff, we only do it a few times a year for that reason.  Oh yea note that we broke out the fine china for the meal:lol:

Ok Ok Ok   I almost feel guilty.... :evil:

Here is a super easy recipe I have not found anyone yet that does not like this:

For 3-4 whole chickens and a coke: baked, slow grilled or deep fried.

1.5 quarts or so of filtered water (tap water is fine if your tap water does not taste bad) in a big saucepan.  Add 2lbs of brown sugar, 1lb of kosher salt, three whole garlic cloves or 1/2 cup minced (canned) garlic, 1/4 cup crushed red pepper and (OPTIONAL) three tablespoons of ground cayenne.  Bring to a boil do dissolve the salt and sugar and remove from heat, this is your brine.  After rinsing the chickens put them in a big enough ice chest that they all fit on the bottom.  Pour your brine over the chickens and then add enough water to just cover the chickens all the way.  You might have to add some weights on top of the chickens to hold them down in the brine and keep them from floating...use your imagination.  Then fill the ice chest the rest of the way up with ice and leave it alone for a minimum of 24 hours.

Grab your chickens and cook them.  If cooking in an oven put them in one huge roaster or a couple of normal ones and cover with foil.  Cook at 350 for 40 minutes then turn down to 250 for about two hours or until they start to fall apart.  Uncover and quickly brown them with your broiler on high and baste with butter.  Grilling.... if you got a rotisserie then that is the best way to cook these, if not grill low and slow on an upper rack turn often and baste in butter.  Depending on the grill sometimes I will wrap them in foil for most of the cooking so they do not dry out. Feel free to add liberal doses of butter into that foil so it is well lubed up.  Deep frying....well do what you normally do there.

Does not sound like much but it really is good.

See, sitting around the house and you get that creative bug and food is where it lands!! I've lived out of bags for the last 11 weeks and ate fast food once! Wendy's, I craved a spicey chicken sandwich! I'd buy groceries and eat in or if I ate out it was someplace good, Ruby Tuesday, Wild Wings, etc. If I'm out on the road I'm slappin' Uncle Sam's arse to eat a meal with a salad and veggies like I do at home.

Food's looking good Tommy!! I'll be kicking around the area for the next week and a half then start on my bridge job so I might throw in some baking to liven up our cooking portion on this website!!
